Recipe Friday on Monday Or How I Erred

Okay, so I just left one little part out. I have a reason. I was getting ready to go to Moonlight and Magnolias, a wonderful writers' conference sponsored by the Georgia Romance Writers' chapter of RWA. It was Wednesday. I was flying by the seat of my pants. Then I thought, "Recipe Friday! Oh, no!" Kathy was also going to M&M. I almost called Cheryl or Stephanie to do the recipe but I decided I could do it quick and move on.

Which I did. Quick doesn't always equal okay. When I got back, I had an email from a confused Cheryl. So I am reposing Friday's recipe, with the correction in bold. Actually, this works out. I am way too sleepy to blog about what I was going to blog about.

Amaretto Punch

  • 2 cups sugar
  • 1 quart boiling water
  • 1 (46 ounce) can unsweetened pineapple juice
  • 1 (12 ounce) can frozen orange juice concentrate, thawed and undiluted
  • 1 (6 ounce) can frozen lemonade concentrate, thawed and undiluted
  • 2 quarts cold water
  • 2 cups Amaretto
  • 2 tablespoons vanilla
  • 1 tablespoon almond extract

Make a simple syrup by combining sugar and boiling water. Cool, mix with other ingredients, and put in quart containers or plastic freezer bags Freeze. Take out at needed and let stand at room temperature until slushy.

  1. So you don't heat the Amaretto to evaporate the alcohol? I absolutely can't have liquor because of meds. This sounds good though.

  2. And when is Cheryl not confused when it comes to recipes? I have to have it step by step or I will surely mess it up. Hope you guys had a good time at M&M. Thanks for the recipe! I am going to use this at Thanksgiving (with the vodka) so that people will enjoy their dinner (LOL).

  3. Pm--No you don't heat the Amaretto, but you could to get rid of the alcohol. It would leave the taste. I would head the amaretto alone and cool it before adding it with the juices etc.

    Cheryl--We did have a good time. And there was good reason to be confused about this one. Geez....

  4. Not really, if I had sat down and thought about it. I would have probably figured it out but then again, I might have gone the other way and cooked everything in the simple syrup. Who knows with me? LOL
